2 15-oz cans garbanzo beans (chick peas)
2 cloves garlic
3 Tbsp tahini
1/2 cup water
1 Tbsp thyme
1 Tbsp parsley
few twists of fresh pepper
I use Eden organic garbanzo beans because they are made with very little salt. Cooking them oneself is no-salt, but it takes quite a while!
Drain and rinse the beans in cold water. . .
. . . and add them to the food processor.
Now it's time to prepare the rest of the ingredients. Chop the garlic cloves, and measure out the herbs and spices.
Quarter the lemon. . .
. . . and squeeze the juice through a strainer, to avoid getting the seeds in the bowl.
Add all the ingredients to the food processor bowl, cover, and puree. . .
. . . until the hummus is smooth and creamy. You may need to add a little more water if it looks dry and not fully pureed.
